For a while now I’ve been meaning to make lemon meringue pie for the first time. DH, who likes lemony things, responded very favourably to the suggestion when I first made it months ago but for one reason and another (most notably a lack of lemons) I didn’t get around to it until last Friday.
I don’t have a large tart tin so made it in 4 small ones instead. The recipe comes from Edmonds recipe book – a kiwi classic.
It came out scrumptious and was not nearly as tricky as I thought it would be.
